Menu Plan Monday {8.13.12}

I've decided to change this up a little bit.  I'm going to list the meals we'll be eating for the week, with the recipe links, but I'm not going to assign them to a day anymore.  By virtue of our schedules, I don't cook every night and when I do cook, especially with the crock pot, it's a meal that has a lot of servings.  We eat a lot of leftovers and, though I make a plan, I'm constantly shifting the meals around during the week.


Meals for the week of August 13, 2012
Baked potatoes
Panini with veggies & dip
Navy beans & ham (crock pot)
Shepherd's Pie (crock pot) (using up the extra potatoes from the baked potato night and cleaning out veggies in my freezer)
Scrambled eggs & toast
Chef salad

These two crock pot meals are very economical if you're looking for cheap, tasty and filling meals for a lean budget week.  The shepherd's pie can be filled with fresh veggies left in the fridge at the end of the week or with the frozen veggies in your freezer.  For the navy beans and ham, I don't purchase a full ham, I just get a couple of thick slices of ham from the deli counter, chop it up and throw it into the crock pot.  It's much cheaper that way, plus I can buy the low sodium ham which I feel better about.
