Lemon Rosemary Salmon

We grilled some salmon the other day and it was absolutely delicious.  Quite simple, too, which always puts a meal high on my list of favorites.  I'd gotten the salmon at the store, but wasn't sure how I was going to fix it.  I poked around the kitchen and found a lemon and we have rosemary growing on the patio.  It seemed like an ideal combination.  And I was right- very tasty!


Ingredients
  • salmon
  • lemon slices
  • rosemary sprigs
  • salt
  • pepper

Directions

1. Spray squares of foil with cooking spray.
2. Lay salmon in the center of the foil.
3. Top with a couple lemon slices and a sprig of fresh rosemary.


4. Fold the foil over to make a sealed packet.
5. Grill for 10-15 minutes until salmon is done. (time will depend on salmon thickness)
6. Carefully pull the foil packet apart- that steam is hot!

Serve the grilled salmon with extra lemon slices and some rice and you have a very light, flavorful summer dinner.
